So we had a bon fire last night. It rained a bit but we were still able to pull it off. I also made my own chocolate bars for the smores. Yes I could have used Hershey’s but I wanted to step it up a bit.

I had two types. Regular chocolate and the other type was sprinkled with crushed almonds. Both were dairy free.

Top Dinner

I made Chinese food for dinner the other night. On the menu was General Tao’s chicken with steamed broccoli and basmati rice, served with an egg-roll. For an appetizer, homemade wanton soup.

I had frozen wanton wrappers, but as I defrosted them, they were cracked and dry. So I decided to bust out my pasta machine and make some fresh dough and roll out some wrappers for the wantons and the egg-rolls. That took a little more time, but I was very pleased with the outcome. I used the same dough for both even though I wasn’t sure that it would work. But it did.

I made a dipping sauce for the egg-rolls too. It had cilantro, cashews and some other ingredients. 🙂 It was delish.

My next car

I will be buying a car relatively soon. I have to think about what I’ll be using it for. I’d like something comfortable but in the luxury category. Or I might like something more rugged in the off-road 4×4 variety.

So if that is the case, on the luxury side, I’m looking at Audi, BMW, Lexus. On the 4×4 side, Range/Landrover, Jeep. I’d like to be able to have a bike rack and some luggage capacity, but on the other hand, we do have an SUV in the family already, and do we need two?

I’m also ok buying used and old. I’d rather buy and not have a car payment and just budget for maintenance. So 3-8 years old is my window for the age of car/vehicle.

My next car is not going to be an orange Lambo.

Chicken Salad Sandwich

I made this chicken salad two nights ago. We had roasted chicken left overs and I pulled all the meat off and made chicken salad. I shopped up celery and red online. Mixed in organic mayonnaise from Trader Joe’s. Sliced tomato with mixed greens and smeared gourmet honey mustard on each slice top and bottom. Throw in the classic UTZ ripple chips and a Kosher dill pickle. Voila!
